Description
A hearty ham and potato soup that warms you up.
Ingredients

- 2 cups diced ham
- 4 cups diced potatoes
- 1 onion, chopped
- 2 carrots, sliced
- 3 cups chicken broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onions and carrots, sauté until tender.
- Stir in ham and potatoes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add milk and season with salt and pepper.
- Cook for an additional 5 minutes.
- Serve hot.
Notes
- For a thicker soup, mash some potatoes.
- Add herbs for extra flavor.
- Refrigerate leftovers for up to 3 days.
