Description
A hearty and rich beef stew made with Guinness beer.
Ingredients
Scale
- 2 lbs beef chuck, cut into 1-inch pieces
- 1 bottle of Guinness beer (12 oz)
- 4 cups beef broth
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides. Remove and set aside.
- Add onions and garlic, sauté until softened.
- Stir in tomato paste, then add Guinness and scrape the bottom of the pot.
- Add beef broth, thyme, bay leaf, salt, and pepper.
- Return beef to the pot and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours.
- Add carrots and potatoes, simmer for another 30 minutes.
- Remove bay leaf before serving.
Notes
- Best served with crusty bread.
- Can be made a day ahead for better flavor.
