Description

A hearty and rich beef stew made with Guinness beer.


Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch pieces
  • 1 bottle of Guinness beer (12 oz)
  • 4 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides. Remove and set aside.
  3. Add onions and garlic, sauté until softened.
  4. Stir in tomato paste, then add Guinness and scrape the bottom of the pot.
  5. Add beef broth, thyme, bay leaf, salt, and pepper.
  6. Return beef to the pot and bring to a boil.
  7. Reduce heat, cover, and simmer for 1.5 hours.
  8. Add carrots and potatoes, simmer for another 30 minutes.
  9. Remove bay leaf before serving.

Notes

  • Best served with crusty bread.
  • Can be made a day ahead for better flavor.
