Ingredients

  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked brown rice or quinoa, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in the garlic and ginger, cooking for 1 minute until fragrant.
  4. Add the bell pepper, broccoli, and carrot to the skillet. Sauté for 5-7 minutes until vegetables are tender.
  5. Pour in the soy sauce, and season with salt and pepper. Stir well to combine.
  6. Serve over cooked brown rice or quinoa.
