- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked brown rice or quinoa, for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the ground turkey and cook until browned, about 5-7 minutes.
- Stir in the garlic and ginger, cooking for 1 minute until fragrant.
- Add the bell pepper, broccoli, and carrot to the skillet. Sauté for 5-7 minutes until vegetables are tender.
- Pour in the soy sauce, and season with salt and pepper. Stir well to combine.
- Serve over cooked brown rice or quinoa.

- Feel free to use any vegetables you have on hand.
- You can substitute soy sauce with tamari for a gluten-free option.
