- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes, drained

- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and garlic; sauté for 2-3 minutes until the onion is translucent.
