- 1 pound ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup corn (frozen or canned)
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
- Transfer the cooked turkey to the crockpot.
- Add the black beans, kidney beans, diced tomatoes, tomato sauce, onion, garlic, chili powder, cumin, paprika, salt, and pepper to the crockpot.
- Stir all ingredients until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, add the corn.
- Serve hot, topped with cheese, sour cream, and green onions if desired.
