Ingredients

  • 1 pound ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup corn (frozen or canned)
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
  2. Transfer the cooked turkey to the crockpot.
  3. Add the black beans, kidney beans, diced tomatoes, tomato sauce, onion, garlic, chili powder, cumin, paprika, salt, and pepper to the crockpot.
  4. Stir all ingredients until well combined.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. In the last 30 minutes of cooking, add the corn.
  7. Serve hot, topped with cheese, sour cream, and green onions if desired.
