Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 cup corn
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until onion is translucent.
  2. Add ground beef to the pot and cook until browned, breaking it apart with a spoon.
  3. Stir in carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables start to soften.
  4. Add diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  6. Add peas and corn, and cook for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary. Serve hot.
