- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen peas
- 1 cup corn
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until onion is translucent.
- Add ground beef to the pot and cook until browned, breaking it apart with a spoon.
- Stir in carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables start to soften.
- Add diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes, stirring occasionally.
- Add peas and corn, and cook for an additional 5 minutes.
- Taste and adjust seasoning if necessary. Serve hot.
