A hearty ground beef soup that warms you up.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup corn
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add onion, carrots, celery, and garlic. Cook until vegetables soften.
- Pour in beef broth and add diced tomatoes, corn, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
Notes
- Adjust seasoning as preferred.
- Add beans for extra protein.
- Store leftovers in the fridge for up to 3 days.
