- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup corn, frozen or canned
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat.
- Add chopped onion and garlic, cook until softened.
- Stir in bell pepper, diced tomatoes, and corn.
- Add chili powder, cumin, salt, and pepper.
- Simmer for 10 minutes, stirring occasionally.
- Let cool and portion into containers.
Notes
- This meal can be stored in the fridge for up to 5 days.
- Reheat in the microwave before serving.
