Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  3. Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
  4. Stir in the enchilada sauce, chili powder, cumin, salt, and pepper. Let it simmer for about 5 minutes.
  5. In a separate pan, lightly warm the tortillas to make them pliable.
  6. Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
  7. Place the rolled enchiladas seam-side down in a greased baking dish.
  8. Pour any remaining enchilada sauce over the top of the rolled enchiladas and sprinkle with the remaining cheese.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.

Notes

  • Feel free to add black beans or corn to the beef mixture for added flavor and texture.
  • You can use store-bought enchilada sauce or make your own for a fresher taste.
  • These enchiladas can be frozen before baking. Just thaw and bake when ready to serve.
