Ingredients
Scale
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup coconut milk
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp turmeric
- 1/2 tsp cayenne pepper (optional)
- 8–10 wooden skewers, soaked in water for 30 minutes
- 2 tbsp vegetable oil, for grilling
Instructions
- Combine coconut milk, fish sauce, brown sugar, garlic, ginger, turmeric, and cayenne in a bowl. Mix well.
- Add chicken pieces to the marinade. Toss to coat. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken pieces onto the soaked skewers.
- Brush the grill grates with oil. Place skewers on the grill.
- Cook for 4-5 minutes per side, or until chicken is cooked through and has grill marks.
- Remove from grill and let rest for 2 minutes before serving.
Notes
- Soak wooden skewers in water to prevent burning.
- You can use chicken breast, but thighs stay more moist.
- For extra flavor, baste with leftover marinade while grilling (first 2 minutes only).
