- 1 pound flank steak
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 8 small flour tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Rub the spice mixture all over the flank steak and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the steak for about 6-8 minutes per side, or until desired doneness is reached. Remove from the grill and let rest for 5 minutes before slicing.
- While the steak rests, grill the sliced peppers and onions for about 5-7 minutes until softened and slightly charred.
- Slice the steak against the grain into thin strips.
- Serve the sliced steak with the grilled peppers and onions, warm tortillas, fresh cilantro, and lime wedges.
Notes
- For extra flavor, add lime juice to the marinade.
