- 1 lb large shrimp, peeled and deveined
- 8 small corn tortillas
- 2 cups shredded green cabbage
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Grill shrimp for 2-3 minutes per side until pink and cooked through.
- In another bowl, mix cabbage, cilantro, red onion, and lime juice to make the slaw.
- Warm tortillas on the grill for 30 seconds per side.
- Fill each tortilla with grilled shrimp and top with cabbage slaw.
- Serve immediately.
Notes
- Use fresh lime juice for the best flavor.
- Adjust spice level by adding more or less chili powder.
- Swap corn tortillas for flour tortillas if preferred.
