- 4 sausages
- 2 bell peppers
- 1 onion
- 2 tablespoons olive oil
- to taste salt
- to taste black pepper
- 2 pounds potatoes
- 4 tablespoons butter
- 1/2 cup milk
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, toss the sliced bell peppers and onion with olive oil, salt, and black pepper.
- Grill the sausages for about 10-12 minutes, turning occasionally until fully cooked.
- In a pot, boil the cubed potatoes until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk to the potatoes. Mash until smooth and season with salt to taste.
- In the last few minutes of grilling, add the peppers and onions to the grill, cooking until tender.
- Serve the grilled sausages with the sautéed peppers and a generous side of mashed potatoes.
