  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1.5 pounds baby potatoes
  • 1 bunch asparagus
  • 4 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup parmesan cheese

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper.
  3. Brush the salmon fillets with the olive oil mixture.
  4. Cut the baby potatoes in half and toss them in olive oil, salt, and pepper.
  5. Place the potatoes on a baking sheet and roast in the oven at 400°F (200°C) for 25-30 minutes until golden and tender.
  6. While the potatoes are roasting, grill the salmon for about 4-6 minutes per side or until cooked through.
  7. For the cheesy asparagus, steam the asparagus until tender, then mix with cream cheese and shredded cheddar cheese.
  8. Sprinkle parmesan cheese on top and broil for 2-3 minutes until bubbly and golden.
