- 4 pieces salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1.5 pounds baby potatoes
- 1 bunch asparagus
- 4 ounces cream cheese
- 1 cup shredded cheddar cheese
- 1/4 cup parmesan cheese
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper.
- Brush the salmon fillets with the olive oil mixture.
- Cut the baby potatoes in half and toss them in olive oil, salt, and pepper.
- Place the potatoes on a baking sheet and roast in the oven at 400°F (200°C) for 25-30 minutes until golden and tender.
- While the potatoes are roasting, grill the salmon for about 4-6 minutes per side or until cooked through.
- For the cheesy asparagus, steam the asparagus until tender, then mix with cream cheese and shredded cheddar cheese.
- Sprinkle parmesan cheese on top and broil for 2-3 minutes until bubbly and golden.
- Serve the grilled salmon with roasted potatoes and cheesy asparagus.
