Ingredients

  • 2 ripe peaches, halved and pitted
  • 4 cups fresh spinach
  • 1 cup fresh raspberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush peach halves with 1 tbsp olive oil and grill for 2-3 minutes per side.
  3. In a large bowl, combine spinach, raspberries, feta cheese, and walnuts.
  4. Whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper.
