- 2 ripe peaches, halved and pitted
- 4 cups fresh spinach
- 1 cup fresh raspberries
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Brush peach halves with 1 tbsp olive oil and grill for 2-3 minutes per side.
- In a large bowl, combine spinach, raspberries, feta cheese, and walnuts.
- Whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper.
- Slice grilled peaches and add to the salad.
- Drizzle with dressing and toss gently.
- Serve immediately.

- Use firm but ripe peaches for best results.
- Substitute goat cheese for feta if preferred.
