- 4 green bell peppers, halved and seeds removed
- 1 pound ground beef
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes, drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add onion and garlic to the skillet and sauté until the onion is translucent.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
- Place the halved green peppers in a baking dish and fill each half with the beef and rice mixture.
- Sprinkle shredded mozzarella cheese on top of the stuffed peppers.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- You can substitute ground beef with turkey or chicken for a lighter option.
- Feel free to add other vegetables like corn or black beans for extra nutrition.
