Greek-yogurt marinated chicken served over a fresh avocado-chickpea salad.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp olive oil

Instructions

  1. In a bowl, mix Greek yogurt, garlic, lemon juice, oregano, paprika, salt, and pepper.
  2. Coat chicken breasts with the marinade and refrigerate for at least 1 hour.
  3. Preheat grill or skillet over medium-high heat.
  4. Cook chicken for 6-7 minutes per side until fully cooked.
  5. Let chicken rest for 5 minutes, then slice.
  6. In a separate bowl, combine avocado, chickpeas, red onion, parsley, and olive oil.
  7. Serve sliced chicken over the avocado-chickpea salad.
