Description
Greek-yogurt marinated chicken served over a fresh avocado-chickpea salad.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 1 avocado, diced
- 1 cup chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tbsp olive oil
Instructions
- In a bowl, mix Greek yogurt, garlic, lemon juice, oregano, paprika, salt, and pepper.
- Coat chicken breasts with the marinade and refrigerate for at least 1 hour.
- Preheat grill or skillet over medium-high heat.
- Cook chicken for 6-7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes, then slice.
- In a separate bowl, combine avocado, chickpeas, red onion, parsley, and olive oil.
- Serve sliced chicken over the avocado-chickpea salad.

- Marinate chicken overnight for deeper flavor.
