  • 1 tbsp lemon juice

  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Mix ground meat, onion, garlic, oregano, cumin, salt, pepper, egg, and breadcrumbs in a bowl.
  2. Shape into small meatballs and cook in a skillet over medium heat until browned and cooked through.
  3. Combine yogurt, grated cucumber, lemon juice, and olive oil to make tzatziki.
  4. Assemble bowls with rice, meatballs, tomatoes, red onion, and parsley.
  5. Drizzle with tzatziki before serving.
