Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
Instructions
- Preheat grill or skillet to medium-high heat.
- Rub chicken with olive oil, oregano, garlic powder, salt, and pepper.
- Grill or pan-fry chicken for 6-7 minutes per side or until cooked through. Let rest for 5 minutes, then slice.
- In a large bowl, combine romaine, tomatoes, cucumber, red onion, and olives.
- Top with sliced chicken, feta cheese, and drizzle with tzatziki.
- Toss gently and serve immediately.
Notes
- Use store-bought tzatziki for convenience or make your own.
- Chicken can be grilled or pan-seared.
- Add pita bread on the side for a complete meal.
