Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 1 tbsp butter
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with parmesan.
  4. Heat olive oil in a pan over medium heat. Cook chicken until golden, about 3-4 minutes per side. Transfer to a baking dish.
  5. In the same pan, melt butter. Add mushrooms and garlic, sauté until softened.
  6. Pour in heavy cream and chicken broth. Simmer until slightly thickened.
  7. Stir in parmesan cheese. Pour sauce over chicken.
  8. Bake for 15-20 minutes until chicken is cooked through.
  9. Garnish with fresh parsley before serving.

  • Use panko breadcrumbs for extra crispiness.
  • Adjust salt to taste if using salted broth.
  • For a lighter version, substitute half-and-half for heavy cream.
