- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper on both sides.
- Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with garlic powder and onion powder in a third.
- Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat with breadcrumbs. Press crumbs to adhere well.
- In a large oven-safe skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- While the chicken is baking, prepare the mushroom sauce. In a separate pan, sauté sliced mushrooms in a little olive oil until they are soft.
- Add heavy cream to the mushrooms and bring to a simmer. Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Once the chicken is done, remove it from the oven and serve hot, drizzled with the Parmesan mushroom sauce and garnished with chopped parsley.
Notes
- For extra flavor, marinate the chicken in buttermilk for a few hours before breading.
- Feel free to add other herbs or spices to the breadcrumbs for additional flavor.
