  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper on both sides.
  3. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with garlic powder and onion powder in a third.
  4. Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat with breadcrumbs. Press crumbs to adhere well.
  5. In a large oven-safe skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. While the chicken is baking, prepare the mushroom sauce. In a separate pan, sauté sliced mushrooms in a little olive oil until they are soft.
  8. Add heavy cream to the mushrooms and bring to a simmer. Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  9. Once the chicken is done, remove it from the oven and serve hot, drizzled with the Parmesan mushroom sauce and garnished with chopped parsley.
