A hearty and flavorful gluten-free taco soup.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and bell pepper. Sauté until soft.
- Add garlic and cook for 1 minute.
- Stir in ground beef and cook until browned.
- Add black beans, corn, diced tomatoes, taco seasoning, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot with your favorite toppings.
Notes
- Feel free to add more vegetables.
- Top with avocado or cheese for extra flavor.
- This soup can be stored in the fridge for up to 3 days.
