Description

Ingredients

  • 2 lbs fresh green beans, trimmed
  • 1 can (10.5 oz) gluten-free cream of mushroom soup
  • 1/2 cup milk (dairy or non-dairy)
  • 1 cup shredded cheddar cheese (optional)
  • 1 cup gluten-free fried onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in boiling water for about 5 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a large bowl, mix together the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Add the blanched green beans to the bowl and mix until well combined.
  5. Transfer the mixture to a 9×13 inch baking dish and sprinkle the shredded cheddar cheese on top, if using.
  6. Bake for 25 minutes until the mixture is bubbly.
  7. Remove from the oven and sprinkle the gluten-free fried onions on top. Return to the oven and bake for an additional 10 minutes until the onions are golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • You can use frozen green beans if fresh are not available; just thaw and drain them before using.
  • Feel free to customize by adding cooked mushrooms or other vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
