Description
A comforting and hearty gluten free chicken noodle soup.
Ingredients

- 2 cups chicken breast, cooked and shredded
- 4 cups gluten free chicken broth
- 1 cup gluten free noodles
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onions and garlic, sauté until translucent.
- Add carrots and celery, cook for 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add shredded chicken and gluten free noodles.
- Season with thyme, parsley, salt, and pepper.
- Simmer until noodles are tender.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Freeze for longer storage.
- Use any gluten free noodles of your choice.
