- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 cup dried green or brown lentils, rinsed
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes, with juices
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the diced carrots and celery, stirring to combine. Cook for another 5 minutes.
- Sprinkle in the ground turmeric, cumin, and coriander, stirring to coat the vegetables.
- Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
- Reduce the heat to low and simmer for about 25-30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro or parsley if desired.
Notes
- This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
- Feel free to add other vegetables like spinach or kale for added nutrition.
- For a creamier soup, blend a portion of the soup and stir it back in.
