  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the diced carrots and celery, stirring to combine. Cook for another 5 minutes.
  4. Sprinkle in the ground turmeric, cumin, and coriander, stirring to coat the vegetables.
  5. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  6. Reduce the heat to low and simmer for about 25-30 minutes, or until the lentils are tender.
