Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup unsweetened cocoa powder
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 3 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  8. In a saucepan, combine evaporated milk, granulated sugar, butter, and egg yolks. Cook over medium heat, stirring constantly until thickened.
  9. Remove from heat and stir in coconut and pecans. Let the frosting cool.
  10. Once the cakes are completely cool, spread the coconut-pecan frosting between the layers and on top of the cake.

Notes

  • For a richer flavor, use dark cocoa powder.
  • This cake pairs well with vanilla ice cream.
