- 4 tilapia fillets
- 2 cups panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 4 medium potatoes, diced
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Bake potatoes for 20 minutes, flipping halfway.
- Mix breadcrumbs, parmesan, garlic, paprika, salt, and pepper in a bowl.
- Dip tilapia fillets in beaten eggs, then coat with breadcrumb mixture.
- Place tilapia on another baking sheet.
- Add tilapia to oven and bake with potatoes for 15 minutes.
- Remove when fish flakes easily and potatoes are golden.
- Sprinkle parsley over tilapia before serving.
