Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season chicken with salt, pepper, and oregano. Sear for 3-4 minutes per side, then set aside.
  4. Add potatoes to the skillet and cook for 5 minutes, stirring occasionally.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Return chicken to the skillet and sprinkle with Parmesan cheese.
  7. Transfer to the oven and bake for 20 minutes, or until chicken is fully cooked and potatoes are tender.
  8. Garnish with parsley before serving.
