- 4 medium potatoes, diced
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season chicken with salt, pepper, and oregano. Sear for 3-4 minutes per side, then set aside.
- Add potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Add garlic and cook for 1 minute until fragrant.
- Return chicken to the skillet and sprinkle with Parmesan cheese.
- Transfer to the oven and bake for 20 minutes, or until chicken is fully cooked and potatoes are tender.
- Garnish with parsley before serving.
