  • 4 medium potatoes, diced

  • 4 cloves garlic, minced

  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 cup chopped parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 10 minutes until golden and tender.
  3. Push potatoes to one side and add chicken breasts to the skillet.
  4. Season chicken with salt, pepper, oregano, and paprika.
  5. Cook chicken for 6 minutes per side until fully cooked.
  6. Add minced garlic and stir to combine with potatoes and chicken.
  7. Sprinkle parmesan cheese over the mixture and let it melt.
  8. Garnish with chopped parsley before serving.
