- 4 medium potatoes, diced

- 1/2 tsp paprika
- 1/4 cup chopped parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 10 minutes until golden and tender.
- Push potatoes to one side and add chicken breasts to the skillet.
- Season chicken with salt, pepper, oregano, and paprika.
- Cook chicken for 6 minutes per side until fully cooked.
- Add minced garlic and stir to combine with potatoes and chicken.
- Sprinkle parmesan cheese over the mixture and let it melt.
- Garnish with chopped parsley before serving.

- Cut potatoes into even pieces for uniform cooking.
- Use freshly grated parmesan for better flavor.
