- 2 boneless, skinless chicken breasts
- 2 cloves garlic, minced
- 1 tbsp mixed dried herbs (thyme, rosemary, oregano)
- 2 tbsp olive oil
- 2 large potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp butter
- 4 medium carrots, peeled and sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with minced garlic, herbs, salt, and pepper.
- Heat olive oil in a pan and sear chicken for 3-4 minutes per side until golden.
- Transfer chicken to a baking dish and roast in the oven for 15-20 minutes.
- Boil potatoes until tender, drain, then mash with milk and butter.
- Toss carrots with olive oil, salt, and pepper, then roast for 20 minutes until tender.
- Serve chicken with mashed potatoes and roasted carrots.

- Use fresh herbs for more flavor.
