- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- In a bowl, mix olive oil, minced garlic, oregano, paprika, salt, and pepper.
- Coat chicken breasts with the mixture and let marinate for 15 minutes.
- Heat a skillet over medium heat and cook chicken for 6-7 minutes per side until fully cooked.
- Slice chicken into strips.
- Divide cooked quinoa or rice between two bowls.
- Top with cherry tomatoes, cucumber, red onion, and sliced chicken.
- Sprinkle with feta cheese and parsley.
- Serve with lemon wedges on the side.

- For extra flavor, add kalamata olives or roasted red peppers.
