Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Add rice and toast for 2 minutes.
  2. Pour in chicken broth, lemon zest, and juice. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In another pan, melt butter over medium heat. Add garlic and sauté until fragrant.
  4. Add shrimp, oregano, paprika, red pepper flakes, salt, and pepper. Cook for 3-4 minutes per side.
  5. Sprinkle parsley over shrimp and serve with lemon rice pilaf.
