- 4 large bell peppers (any color)
- 1 lb ground chicken
- 3 cloves garlic (minced)
- 1/2 cup cooked rice
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, brown the ground chicken with garlic over medium heat.
- Stir in cooked rice, Parmesan, Italian seasoning, salt, and pepper.
- Fill each pepper with the chicken mixture.
- Place peppers in a baking dish and top with marinara sauce.
- Bake for 25 minutes.
- Add mozzarella cheese and bake for 5 more minutes.

- Use any color bell pepper for variety.
- Substitute ground turkey if preferred.
- Adjust seasoning to taste.
