A simple and delicious one-pan meal featuring juicy steak and crispy potatoes cooked in garlic butter.
Ingredients

- 2 (8 oz) ribeye or sirloin steaks
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
Instructions
- Season steaks with salt, pepper, and paprika. Let rest for 10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Cook steaks for 3-4 minutes per side for medium-rare. Remove and set aside.
- In the same skillet, add potatoes and cook for 10 minutes, stirring occasionally.
- Add butter, garlic, and thyme to the skillet. Stir to coat the potatoes.
- Return steaks to the skillet. Cook for 2 more minutes.
- Serve hot with the garlic butter sauce.
Notes
- Let the steak rest before slicing for juicier results.
- Use a meat thermometer for perfect doneness (135°F for medium-rare).
- Swap baby potatoes with fingerlings or diced russets if preferred.
