Description

A quick and flavorful dish combining tender shrimp with garlic butter and fried rice.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp black pepper
  • 2 green onions, chopped

Instructions

  1. Heat 1 tbsp butter in a large skillet or wok over medium heat.
  2. Add shrimp and cook until pink and opaque. Remove and set aside.
  3. In the same skillet, add remaining butter and garlic. Sauté until fragrant.
  4. Add peas and carrots, and cook for 2 minutes.
  5. Push vegetables to one side and pour beaten eggs into the skillet. Scramble the eggs until fully cooked.
  6. Add cooked rice, soy sauce, oyster sauce, and black pepper. Stir to combine.
  7. Return shrimp to the skillet and mix well.
  8. Garnish with chopped green onions and serve hot.

Notes

  • Use day-old rice for best results to prevent it from becoming mushy.
  • Adjust soy sauce to taste if you prefer a saltier or milder flavor.
  • Add chili flakes for a spicy twist.
