Ingredients

  • 1 cup white rice
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb chicken breast, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp lemon juice
  • 1/4 cup chopped parsley

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Heat olive oil in a pan over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes.
  3. Add shrimp to the pan and cook until pink, about 2-3 minutes per side.
  4. Push shrimp and chicken to one side of the pan. Melt butter in the empty space and sauté garlic until fragrant, about 30 seconds.
  5. Mix garlic butter with shrimp and chicken. Season with salt, pepper, paprika, and lemon juice.
  6. Serve over cooked rice and garnish with chopped parsley.
