Instructions
- Preheat oven to 400°F.
- Toss potatoes with olive oil, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Roast for 30 minutes, flipping halfway.
- Mix melted butter and garlic in a bowl.
- Pour garlic butter over potatoes and roast for 10 more minutes.
- Sprinkle with parsley before serving.
