Instructions
- In a saucepan, heat the broth over low heat and keep it warm.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
- Add the sliced mushrooms and cook until they are golden brown, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.
- Pour in 1 cup of the warm broth and stir until absorbed. Continue adding the broth, one cup at a time, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.
- Remove from heat and stir in the remaining butter, Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.
- Serve immediately, garnished with extra parsley and Parmesan if desired.
