Instructions

  1. In a saucepan, heat the broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  3. Add the sliced mushrooms and cook until they are golden brown, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.
  5. Pour in 1 cup of the warm broth and stir until absorbed. Continue adding the broth, one cup at a time, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.
  6. Remove from heat and stir in the remaining butter, Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.
  7. Serve immediately, garnished with extra parsley and Parmesan if desired.
