- 3 large eggs
- 1 cup buttermilk

- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup rainbow sprinkles
Instructions
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, cream butter, sugar, and oil until fluffy.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla and almond extracts.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Alternately add dry ingredients and buttermilk to the batter, mixing until just combined.
- Fold in sprinkles gently to avoid color bleeding.
- Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack.
- Frost and decorate as desired.
Notes
- For best results, use jimmies-style sprinkles (avoid nonpareils, as they bleed color).
- Replace buttermilk with 1 cup milk + 1 tbsp vinegar if unavailable.
- Store covered at room temperature for up to 3 days.
