Ingredients

- 4 cups shredded potatoes
- 2 cups cooked chicken, shredded
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup crushed cornflakes
- 1/4 cup butter, melted
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine shredded potatoes and cooked chicken.
- Add cream of chicken soup, sour cream, garlic powder, salt, and pepper. Mix well.
- Fold in 1 cup of cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- In a separate bowl, mix crushed cornflakes with melted butter.
- Sprinkle the cornflake mixture over the casserole.
- Bake for 45 minutes or until golden brown and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Can be prepared in advance and refrigerated before baking.
- Use leftover rotisserie chicken for convenience.
- Adjust cheese according to preference.
