Ingredients

  • 4 cups shredded potatoes
  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup crushed cornflakes
  • 1/4 cup butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded potatoes and cooked chicken.
  3. Add cream of chicken soup, sour cream, garlic powder, salt, and pepper. Mix well.
  4. Fold in 1 cup of cheddar cheese.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. In a separate bowl, mix crushed cornflakes with melted butter.
  7. Sprinkle the cornflake mixture over the casserole.
  8. Bake for 45 minutes or until golden brown and bubbly.
  9. Let it cool for a few minutes before serving.
