- 2 cups fresh black eyed peas
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped

- 1/2 teaspoon black pepper
- 1 cup vegetable broth
- 1 tablespoon lemon juice
Instructions
- Rinse the black eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper; sauté until soft.
- Add black eyed peas, salt, and black pepper; stir to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes.
- Stir in lemon juice before serving.
Notes
- Fresh peas can be substituted with canned peas, reduce cooking time.
