- 1 pre-made tart shell (9-inch)
- 1 pound fresh apricots, pitted and sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1 tablespoon butter, cut into small pieces
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, granulated sugar, cornstarch, vanilla extract, lemon juice, and almond extract (if using). Toss gently to coat the apricots evenly.
- Pour the apricot mixture into the prepared tart shell, spreading it out evenly. Dot the top with small pieces of butter.
- Bake the tart in the preheated oven for 30-35 minutes or until the apricots are tender and the tart shell is golden brown.
- Remove from the oven and allow to cool for at least 15 minutes before serving.
- Dust with powdered sugar before slicing and serving, if desired.
Notes
- For a richer flavor, you can add a layer of almond paste or cream cheese at the bottom of the tart shell before adding the apricot mixture.
- Serve with whipped cream or vanilla ice cream for an extra special treat.
