Ingredients

  • 1 pre-made tart shell (9-inch)
  • 1 pound fresh apricots, pitted and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract (optional)
  • 1 tablespoon butter, cut into small pieces
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, cornstarch, vanilla extract, lemon juice, and almond extract (if using). Toss gently to coat the apricots evenly.
  3. Pour the apricot mixture into the prepared tart shell, spreading it out evenly. Dot the top with small pieces of butter.
  4. Bake the tart in the preheated oven for 30-35 minutes or until the apricots are tender and the tart shell is golden brown.
  5. Remove from the oven and allow to cool for at least 15 minutes before serving.
  6. Dust with powdered sugar before slicing and serving, if desired.

Notes

  • For a richer flavor, you can add a layer of almond paste or cream cheese at the bottom of the tart shell before adding the apricot mixture.
