  • 1 teaspoon sugar
  • 1 teaspoon salt

  • 1/2 cup dry white wine
  • 6 cups beef or vegetable broth
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, sugar, salt, and pepper. Cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.
  3. Pour in the white wine and cook for 5 minutes, scraping the bottom of the pot to release any browned bits.
  4. Add the broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Place the baguette slices on a baking sheet and toast in the oven until golden brown.
  7. Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
  8. Place the bowls on a baking sheet and bake in the oven for about 10-15 minutes, until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley if desired and serve hot.
