Description
A classic French Onion Soup made with caramelized onions, rich broth, and topped with melted cheese and toasted bread.

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine
- 6 cups beef or vegetable broth
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 bay leaf
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions, sugar, salt, and pepper. Cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.
- Pour in the white wine and cook for 5 minutes, scraping the bottom of the pot to release any browned bits.
- Add the broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Preheat the oven to 350°F (175°C).
- Place the baguette slices on a baking sheet and toast in the oven until golden brown.
- Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and bake in the oven for about 10-15 minutes, until the cheese is bubbly and golden brown.
- Garnish with fresh parsley if desired and serve hot.
