- 2 cups beef broth
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- Salt and pepper to taste

- Pour in beef broth and Worcestershire sauce, and bring to a simmer. Season with salt and pepper.
- Add the sliced roast beef to the broth mixture, allowing it to heat through, about 2-3 minutes.
- Preheat the oven to 350°F (175°C).
- Slice the hoagie rolls in half and place a slice of provolone cheese on each half.
- Place the rolls in the oven for about 5-7 minutes or until the cheese is melted.
- Remove the rolls from the oven and fill each with the heated roast beef mixture.
- Serve the sandwiches with a small bowl of the au jus for dipping. Garnish with chopped parsley if desired.
Notes
- You can add sliced jalapeños or peppers for extra flavor.
- For a richer au jus, consider adding a splash of red wine to the broth while simmering.
