Description
A classic British dish, fish and chips features crispy battered fish served with golden fries. This recipe ensures a crunchy texture and flaky fish inside, perfect for a cozy dinner or a fun takeout night at home.

- 2 large 2 large russet potatoes
- 1.5 cups 1 1/2 cups all-purpose flour
- 1 teaspoon 1 teaspoon baking powder
- 1 cup 1 cup cold sparkling water
- 1 teaspoon 1 teaspoon salt
- 4 pieces 4 pieces white fish fillets (cod or haddock)

Instructions
- Peel and cut the russet potatoes into thick fries. Soak in cold water for 30 minutes, then drain and pat dry.
- In a bowl, whisk together flour, baking powder, and salt. Gradually add cold sparkling water until smooth.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Blot the fish fillets dry, then dip each into the batter to coat.
- Fry the battered fish in hot oil for 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.
- In the same oil, fry the soaked potato fries until golden and crispy, about 4-5 minutes. Drain on paper towels.
- Serve the fish and chips hot, optionally with tartar sauce or malt vinegar.
Notes
- For extra crispy fries, double fry them: fry once until soft, then let them cool, and fry again until golden.
- Use a thermometer to maintain oil temperature for best results.
