Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture over the chicken breasts evenly.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until browned.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add diced red and green bell peppers, corn, and black beans. Stir and cook for 3-4 minutes until the vegetables are slightly softened.
  6. Add the salsa to the skillet and stir to combine. Place the chicken breasts back in the skillet on top of the vegetable mixture.
  7. Sprinkle the shredded cheese over the chicken breasts.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Remove from the oven, garnish with fresh cilantro, and serve hot.

Notes

  • You can use any color bell peppers for added color.
  • Serve with rice or tortillas for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
