- 2 boneless, skinless chicken breasts
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup olives, pitted and sliced
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes before slicing.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
