  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.
  3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Dredge each eggplant slice in flour, dip in the beaten eggs, and coat with breadcrumbs, ensuring they are evenly covered.
  5. Lightly spray the air fryer basket with olive oil spray. Place the breaded eggplant slices in a single layer in the basket. Spray the tops with olive oil.
