A quick and healthy zucchini stir fry packed with fresh vegetables and a savory sauce. Perfect for a light meal or side dish.
Ingredients

- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add garlic and onion, stir-fry for 1 minute until fragrant.
- Add carrots and bell pepper, cook for 2-3 minutes.
- Add zucchini and stir-fry for another 3-4 minutes until tender but crisp.
- Pour in soy sauce, oyster sauce, and sesame oil. Toss to coat evenly.
- Season with salt, pepper, and red pepper flakes if using.
- Cook for another minute, then remove from heat.
- Serve hot.
Notes
- Do not overcook the zucchini to keep it crisp.
- Add tofu or chicken for extra protein.
- Adjust spice level with more or less red pepper flakes.
