- 2 cups of cooked quinoa
- 1 can of black beans, drained and rinsed
- 1 cup of corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup of cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked quinoa, black beans, corn, and red bell pepper.
- Add diced avocado and chopped cilantro to the mixture.
- Drizzle lime juice over the salad.
- Season with salt and pepper to taste.
- Toss everything together until well mixed.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
